Colocasia Tuber Salad with Sumac

Food for Thought

Sumac is added to a variety of Lebanese dishes. The traditional therapeutic uses of sumac include the treatment of indigestion, anorexia and hyperglycemia. Region: Chouf

Ingredients
  1. 200 g colocasia tubers, peeled, cleaned and quartered
  2. 1 ½  tbsp sumac
  3. 1 cup water
  4. 1 cup olive oil
  5. ½  tsp salt

Method of Preparation
  1. Heat the olive oil in a small saucepan, then add the tubers and fry them until their color turns light brown.
  2. In a bowl, combine the fried tubers with the remaining ingredients and mix well.

Yield 2 servings
